I&amp;#39;ve one tagine that I&amp;#39;m a little leery about, so I think I&amp;quot;ll try the lemon test and see what happens. &lt;br /&gt;&lt;br /&gt;I&amp;#39;m a firm believer in the superiority of clay pots for anything other than a high temp sear. My theory is that the walls of the pot heat up and also cook the food, so there is more of a surround-cook, as compared to a bottom-up heat. &lt;br /&gt;I love your photo of the stovetop cookware...
